In SPM2 - the voxel size is determined by your input image, I think.
In SPM5 - its not spm_segment, but rather spm_preproc and it writes
default segmented files and normalisation parameters. I have not tried
these routines extensively, yet. But perhaps you have to go for writing
out un-normalised segments (which should be in your native resolution) and
afterwards normalise them using the parameters estimated during
segmentation.
