These are documented if you type
help spm_vol

This indicates the volume number in 4D datasets. For a 3D set, it takes a
value of 1. In SPM5b, n contains two elements, allowing the 4th and 5th
dimension to be selected.

In SPM2, it contained various file descriptors and stuff. These were there in
order to reduce the number of times a file has to be re-opened in order to
write a plane of data. There were also various other items of header
information.
In SPM5b, it contains information from the NIFTI/Analyze headers, as derived
from the nifti class.
