The lack of tissue probability maps for skull and skin means that SPM may not
be ideal for doing this - although by adding up the grey, white and CSF
images (and possibly thresholding this), you may be able to obtain something
that can help with your segmentation.
The bias corrected image (m*.img) may also be useful as it should make it
easier to classify the voxels by some sort of interactive thresholding.

You could try Brain Extraction Tool (BET), which is part of FSL. If I
remember correctly, this will identify a brain and head surface. There
may also be other tools that will do the job at:
