Quite a low tech suggestion:
We have prepared material in Glasgow Caledonian University, mainly for staff development materials, on a small scale, which I don't think contravenes any privacy ethics. Admittedly it was with the Virtual Classroom where text files of the archived discussions are (were?) readily available. I simply put these into Word and anonymized them with Find and Replace, pasting a real name into the Find box and typing a fictitious name into the Replace With box. I may have used fictitious names such as Student1 etc.. One click on Replace All did the trick.

May I ask what you do do? Do you show, for example, a departmental
workshop gathering in Media how students have successfully used the
discussion board in a Bb course in Health?

something regarding shared practice to the student charter, but would
like to scope first how other instutions are dealing with this.
