My understanding, although I haven't instaleld the 10.3.4 update is that
it'll change the Java version.

I think "not really encouranged" is an understatement, like the system
version of Perl, if you fiddle with it you're liable to break large
swathes of the operating system (aparently, as always, your milage may
vary).
For Perl development I've got my own (compiled from scratch) version of
perl sitting in my home directory, unfortunately since (as Norman says)
apple distribute Java for MacOSX, not Sun, there doesn't seem to be a way
to do something like this for Java.
