I work in the food industry and we refer to DoH Food handlers:Fitness to
work Guidelines 1995.
Section 46 refers to infected lesions of skin eyes, ears and mouth.
"In order to prevent potential contamination of the product with
staphylococcus aureus or streptococci it is important that anyone who
has a scaling, weeping or discharging lesions on any part of their skin
(face, hands, neck, arms or scalp) which can not be covered ceases food
handling".
