For those interested in the chemistry of charred grains, there is a useful
paper available on-line which describes the chemical analysis of modern
experimentally charred emmer grains. The grains were charred at different
temperatures and the alterations in chemical composition, particularly
starch and protein, investigated. Implications for survival of charred
grains in the archaeological record are briefly discussed.
