Why don't you try drinking Murphy's Irish Stout instead? It's similar to guinness but much creamier and lacking in the nasty after-taste often encountered with Guinness, so it should be easier to pour down. You need to avoid the tourist trap of the Temple Bar (which is generally full of pre-nuptual English blokes on a drinking/fighting binge) and head to the southwest of Ireland towards Cork city to get the best pint of Murphy's (you can kiss the Blarney stone while you're down there too). If you want to blend in with the locals, you really should be drinking Smithwicks, but it's grim stuff, so I'd give it a miss.
Generally Ireland gets better once you're out of Dublin anyway. The southwest coast from Cork around Kerry and upto Clare is lovely. The west is also nice, Galway, Achill Island, etc.. The Northwest is my favourite bit. Head for Donegal and prepare to meet some of the best people on the planet in some lovely places.
Wherever you end up, take your umbrella, waterproofs, etc... as you'll probably already know it rains a bit over there. And avoid talking to any people about 'spreading your ring' no matter how many pints of the blackstuff you drink!
