William Hansen's _Ariadne's Thread_ might prove useful. See the Bryn
Mawr Classical Review of it at:

Despite its length (c.550 pages) it has some surprising omissions,
but for the stories it treats it's quite good, with numerous
references and good bibliographies for further reading.
There's a section on Perseus/St. George but nothing in the index s.v.
either Eustace or Placidus.
