Hi there!
Not knowing much about the world south of here
(Yorkshire) I don't have a definite answer, but it
seems likely that there would have been an auxiliary
bishop (at least one) for the Canterbury diocese.
The English sees were much larger than the present
ones carved out of them and certainly the Diocese of
York at the beginning of the 16th century had an
auxiliary, who was titular bishop of Nigropolis.
It's a pity that the original is so ambiguous about
'in pontificalibus'... who exactly was in pontificals,
this being a hot potato in the middle ages...
As for only having one Canape! My imagination runs
riot over the two Archbishops fighting for the
medieval equivalent of cheese on a cocktail stick...
