Try changing spm_defaults.m instead (SPM2 only). It currently says:
defaults.segment.estimate.priors = str2mat(...
fullfile(spm('Dir'),'apriori','gray.mnc'),...
fullfile(spm('Dir'),'apriori','white.mnc'),...
fullfile(spm('Dir'),'apriori','csf.mnc'));
