It's my experience that finding details of chapters on databases
depends very much on what subject you're dealing with. Most
databases and ESPECIALLY WoS deal only with the periodical
literature; WoS in particular comes from the organisation that
makes its name from providing impact factors, and is only
marginally interested even in conference literature. Non-periodical
literature is not peer-reviewed and doesn't usually get a look-in.
In biological sciences (which is what I know about), the databases
which sometimes, but not always, provide chapter information ar
BIOSIS and CAB Abstracts (that I know of). They are interested in
the literature!
You could try (for the recent literature) looking for details in the
publishers' own websites; though pagination isn't often there.
But if you're compiling a bibliography without having seen the
papers or chapters, I'm afraid that you should see them! Borrow the
books and read and evaluate the texts for yourself! There are no
short cuts in good work. (Paraphrase of Euclid: There is no royal
