Hi Michael,
You will see Flakes and Stages still being put to their original use in the
outports of Newfoundland and Labrador - though it is a long time since they
were used here.
Flakes, or fish-flakes are where fish is processed for storage - strictly
speaking where fish is dried, although in modern use this can include
salting sheds and smoke-houses - or even the cleaning sheds. Even to this
day you can see both squid and codfish being dried in the atlantic breeze
along the newfoundland coast. The aroma is to say the least, unique (and
rather unpleasant).
They are, needless to say, always placed adjacent the water, since the raw
materials are invariably brought by boat :)

I acquired a b & w photo this a.m. of some sort of industry on a cliff with
half a dozen huts, substantial areas with apparently temporary roofs, a
number of small boats, a jetty, a few onlookers and lots of timber
scaffolds, props and struts etc. On the back is written what looks like
'stages and flakes near Torbay' if anyone is interested in the area I will
send them a scan off-list, I would like to know more myself anyway.
