Some reflection on the terminology. What you described as vertical mapping
would be better called as "finding general patterns" of business processes
and grouping the processes according to the patterns. This is a very useful
task to do even if you start with ordinary mapping of the processes as-is
(horizontal mapping in your terminology). For more discussion on general

As far as what way to choose: start with ordinary process mapping or with a
number of general patterns, it depends on the business environment and the
project tasks. For the processes that you can suspect some general pattern
you can start with the pattern, otherwise you need to analyze a number of
processes first, and come to a common pattern afterwards. More discussion
