Actually you have many options to choose from. Of course you have MS Excel
(and the obvious C/C++/Java) but in addition to these we use the following
tools for prototyping and visualization:
For UNIX/LINUX/MS WIN* (all commercial)
S-Plus (http://www.insightful.com/Default.asp?bhcp=1) which is a
statisicatal package geared to the statisitcal manupulation of experimental
data, in fact it is a wealth of plotting/graphing options.
IDL (http://www.rsinc.com/) excellent for visualization but needs a little
time to learn.
Matlab (http://www.mathworks.com/)with the Statistics toolbox (without the
stats tb, there would be a few things that you need to by hand. If you
know C/C++/Java, you should not have a problem.
Mathematica (http://www.wolfram.com/) also has a rich set of algol-like
syntax and visualization options
There are, also, many public domain software packages that you can choose
from:
The R-Language (http://stat.ethz.ch/R-alpha/R-patched/doc/html/). It comes
with a great deal of documentation and newsgroups and the lik. Compatible
with S-Plus (almost)
GNU Plot for UNIX and Linux (https://sourceforge.net/projects/gnuplot/)
(Also for windows ftp://ftp.dartmouth.edu/pub/gnuplot/ - I have not tried
this one)
If you know python (the great little language) there is "gnuplot.py"
(requires GluPlot)or just plain python with Tkinter (for grphics and
windowing)
There are many more but these are what comes to mind
