I have a paper forthcoming on the problems of quality versus safety in
catering. It will be published in the Journal of Environmental Health
Research volume 2 (I've just OKed the proofs so it shouldn't be too long
before it's out).
As there are Env Health programmes in both Salford and Manchester Met, you
should be able to get copies fairly easily.

I am working on a project about working conditions in Road Transport
