I'm aware that quite a few university libraries are now moving to online
only subscriptions or are at least considering doing so. Are there any
surveys being taken out regarding this?

Sheffield went e-only with IDEAL in 2002, ditto for Elsevier in 2003.
We'll be evaluating other large publisher subscriptions with a view
to extending this policy.
(We carried out a user survey of paper copies for both of the above
publishers' titles by withdrawing the current issues from display
and requiring users to request them from the serials office. We
then asked them to complete a brief questionnaire about their
awareness and need for paper copies. Demand for these was very
low indeed. A number of users said that reading paper journals was
a welcome break from PC use!)
