It is my understanding that you cannot do what you want to do with the
software you are using. You can copy the text from each page (by using the
"copy Text" tool or by clicking on "Select All" on the edit menu. But it
will only copy a page at a time, so the task would be daunting.
You can purchase additional software that will do what you want to do. A
complete version of Adobe Acrobat will probably run you about 100 pounds or
so. There may be a student price. Your department may own a copy. Anyway,
once you have it you will need to purchase a third party "plug-in" that
will allow you to convert the PDF files back to text. Adobe has an online
service for visually impaired users that will convert PDF into HTML. You
might try that, but the number of documents you are talking about may cause
problems. Have you contacted Adobe directly? They might be willing to help
since it is legitimate academic research.
