You don't want to do this. Adobe does not support this function because
the pdf format is intended to impede the copying of text. However, there
are some third party programs that will do this. They are not cheap, and
I was unhappy with the results that I got when I tried the demos. I can
find those link again if you want to try these programs.
You have two other options. Use the files that we used to generate the
pdf files. That's the best solution if you can get these files. The second
is to print, scan, and OCR the pdf files. That is what I had to do. It's
a lot of work. Also, you can capture the text from a pdf file that was
created by scan/OCR (but not from 'distilled' files as discussed above).
I created new pdf files by print/scan/OCR and captured text as needed from
those files.
