There are, I think, many examples of altered dedications, and no reason why
a dedication should not be changed. A new patron/rector (e.g. a monastery)
in the medieval period may well have rededicated a church to a favoured
patron saint. When older dedications are uncovered, it is often I think
fortuitous, depending on the chance discovery of some reference in a old
(usually very ancient) document.
