There was a very good TV program recently (I think on BBC) showing how many
of the most "natural" looking shots in these documentaries are in fact
elaborately set up. I particulary remember one film of a field of bluebells
that was in fact a patch of ground entirely enclosed within a tent and
artificially lit.
