Florian, there is a useful introduction into hardening techniques of
ferrous edge tools, including many references, in
R. F. Tylecote (1986) The prehistory of metallurgy in the British Isles.
London: The Institute of Metals, pp. 171-175 (Roman swords).
There are several other paragraphs in the book on (surface) hardening of
ancient metals (e.g. p.34 - have a look in the index and the technical
glossary). From a historical, rather than archaeological, point of view
J.W. Humphrey, J.P. Oleson and A.N. Sherwood (1998) Greek and Roman
technology - a sourcebook. Annotated translations of Greek and Latin
texts and documents. London/New York: Routledge
proves quite useful, especially Chapter 6 on metallurgy. Try pp.218-220
(iron and steel production).
